Rice Pudding

For some reason, I've been craving rice pudding. It worked out today because I had some milk that only had a couple good days left in it and a package of raisins from my mom that I was never going to get around to eating. I usually don't like raisins in my rice pudding (although Craisins are another story), but I figured I could do something to doctor them up a bit. Ended up simmering them with some apple cider vinegar, cinnamon sticks, clove syrup (leftover from some Thanksgiving mixology) and a splash of vanilla extract. Not bad. Certainly aromatic.

Oh, also, I really like to make rice pudding with Arborio rice. It's a shorter-grained Italian rice usually used for risotto. I dunno, it's just got this dense chewiness to it that I like. I probably could have used a little more milk than I did; the pudding came out a little dry. But still yummy.
